Red Pepper Hummus Deviled Eggs


These incredible egg hors d'oeuvres make a perfect anytime snack. I bought these bag of sweet red peppers on sale and found some beautifully neat ideas to blend in the red pepper in variety of dishes


Most of egg's nutrition is in its yolk, so blend it in together with the chick peas. The mellow sweet flavor of roasted red peppers totally enhances taste and appeal of plain hummus.

Ingredients
2 red bell peppers
2 cups cooked or canned chickpeas.
2 cloves garlic
3 tablespoon Tahini sauce
1/2 a lemon
1/4 cup Extra Virgin Olive Oil
6 Organic hard boiled eggs

Method
To Roast red peppers ,Char the pepper on high heat in a broiler or grill.Turn occasionally with tongs, until skins are blackened, 15 to 20 minutes. Allow to cool then peel and deseed the pepper.
Remove shell from boiled eggs.Cut each egg in half, do not discard the yolks, blend in with chick peas.
To make the red pepper hummus , smoothly blend roasted peppers with all the ingredients(including egg yolks) in a high power food processor until creamy .Start without adding water then slowly pour in the Oil and lime juice
Fill each half of the boiled egg with the prepared red pepper hummus.Top each egg with chopped red peppers and herbs.

Pita Wedges with Green Almond Hash and Hummus


Tender ,green and fuzzy ,these tangy morsels ,is how the amazing almonds start off.Exclusive to the spring season,green almonds are considered a rare delicacy for its short lifespan and incredibly succulent flavor.The tender spring fruit,has a soft white almond core,is completely edible,while the green almonds harvested in late summer have harder shell,with a more firm and brown almond in the core.Originating from Middle East and Mediterranean,these are also grown in California and can easily be spotted in Middle Eastern and other specialty stores,at an affordable price.


The grape-sized green almonds with a sprinkle of salt makes an enjoyable tart snack.Or makes a wholesome addition in stews and pasta.The grated or shaved green almonds can be tossed in salad or used as garnish.

These strikingly attractive appetizers , made with crunchy baked whole grain pita wedges slathered with creamy hummus and garnished with finely shred green almonds, red cabbage and fresh herbs,is one another simple and pleasing way to savor the spring delicacy.

Ingredients
For Pita wedges
2 large or 3 medium whole grain pita bread
1 tablespoon extra virgin olive oil
1/4 teaspoon hot chili powder
1/4 teaspoon salt

For Green Almond Hash
1 cup tender green almonds,rinsed
1 tablespoon lemon juice,freshly squeezed.
pinch of salt

1 cup home made hummus

1/4 cup of other vegetables like carrots or red cabbage,finely shred
few leaves of fresh herbs(I use tender fenugreek leaves)

Method
Preheat oven to 400 degrees F
Using a chef's knife cut each pita in to 2 halves. Cut each half in 4 or 8 triangles each,depending how big you like the wedges. Lay the triangles on a cookie sheet.
Combine Olive oil and spices in a bowl. Brush the mixture over each of the cut pita.
Now bake for about 7-8 minutes until lightly browned and crispy.Keep a close eye as these can burn easily.Cool for rack for a minute before spreading hummus.

While the pita wedges cool,prepare the green almond hash.Snap off the step part of the almonds.Process in a blender or food processor along with salt and lemon juice until finely chopped.

To assemble the wedges,spread about a tablespoon of hummus over,then sprinkle the green almond hash all around ,then finally sprinkle other shred vegetable and some fresh herbs and serve.

Chickpeas Polenta(Panisse) with Olives and Sun dried Tomatoes

Some flours remain unused in my pantry forever.Once of those is Chickpea flour(besan),I got this one pack last Ramadan,consumed a couple of times for these delicacies and rest has been in there since.I chanced upon the pleasing Panisse recipe in my treasured Mayo clinic cookbook ,just in time before the expiry date of the flour.
Panisse is a filling french snack,with polenta like soft texture,that is also served as side.The snack is usually cut and fried like french fries.The cookbook's adaptation is baked panisse,which is then broiled until crispy and then made more appealing with the olive and sun dried tomatoes topping.The vegan substitute Tofu was not in the book,but should work next best instead of eggs.

To find the star ingredients in this recipe,the chick pea flour,track down your nearest East Indian or Arab store,you are sure to spot it in the flour aisle.


Recipe: Chickpea Polenta ,adapted from Mayo Clinic Cookbook.
Ingredients
1 3/4 cup(9 oz/280g) Chickpea(Garbanzo bean) flour[Available in Italian,Arab and East Indian stores]
2 cups(16 fl oz/500ml) plain soy milk or reduced fat milk
1 cup Vegetable stock or water
1 tablespoon extra virgin olive oil
2 cloves garlic,finely chopped
1 tablespoon fresh thyme ,oregano or basil,chopped or 1 teaspoon dried
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon turmeric(optional)
3 Organic Egg whites(Vegan substitute : 4 oz silken tofu)
For Topping
1 tablespoon extra virgin olive oil
1 medium onion,sliced
1/4 cup black olive,chopped or sliced
1/4 cup dry-packed sun-dried tomatoes,soaked in water to rehydrate,drained and chopped


Method
In a blender or food processor,combine flour,milk,stock,oil,garlic,mustard,salt and pepper.Process until smooth.Pour batter in a bowl and let stand for few minutes.

Preheat oven to 375F.Lightly coat a 9 x 13 inch baking pan or dish with cooking spray.

If using Eggs
In a large,grease free bowl,using an electric mixer on high speed or hand whisk,beat egg whites until stiff peaks form.Gently fold the egg whites in to the batter.

If using Tofu
Use a hand whisk and beat the tofu until smooth.Mix in the batter.

Now pour the batter in to the prepared pan.Bake until puffed and lightly brown around the edges,about 20-25 minutes.Let cool for 15 minutes.

While polenta is cooling,make the topping.In a small saute or frying pan,heat the oil over medium heat.Add the onion and cook until soft and lightly golden,about 6 minutes.Add the olives and tomatoes and cook for a minute.Remove from heat.

Sprinkle the onion olive mixture over the baked polenta.Broil until the top is lightly brown.Watch carefully,this takes only about a minute.
Cut the Polenta in squares then cut the squares on the diagonal in to wedges.Serve immediately.Can be stored in the fridge for 3-4 days.Warm before serving.

Moroccan Vegetable Chickpeas Couscous


Moroccan Cuisine is one of the most diversified Middle eastern cuisines.Two talented bloggers Sabah of Sousou kitchen and Touria of Cuisine Touria hosted the Moroccan Cuisine for the Walima club December.They choose to celebrate with ever so popular Moroccan Couscous as the savory dish.Do visit their blogs to learn more recipes from the rich cuisine.

A Quick Intro. of Moroccan Cuisine
The Moroccan Cuisine is one of the diversified cuisines in the world. It is a mix of Berber, Spanish, Moorish, Middle eastern, Mediterranean and African Cuisines.
1)Moroccan-Berber cuisine:The Moroccan Cuisine has been influenced by the native Berber cuisine which differs from one area to an other within North Africa.The principal Berber food is:
-Couscous
-Tajine wich is a very diversified dish
-Mechoui or lamb barbecue
-Harira which is a famous Moroccan soup during Ramadan.
-Bread made with traditional yeast

2)Moroccan-Andalusian cuisine:
Andalusian cuisine has also influenced Moroccan Cuisine. Moriscos or (Muslim refugees) who were expelled from Spain during the Spanish inquisition brought with them their civilization. The famous Moroccan Andalusian dish is Pastille which is a wedding dish made of chicken and almonds. Besides pastille, a lot of Moroccan pastries are based on Andalusian pastry such as almond cookies.

3)Moroccan-Middle eastern cuisine:
As Moriscos, Political refugees left Baghdad in the middle ages and settled in Morocco, bringing with them traditional recipes that are now common in Morocco but Forgotten in the middle east. There is a striking similarities between 12th Century collection of recipes by Al-Baghdadi and contemporary Moroccan dishes. A signature characteristic is cooking fruit with meat like quince with lamb or apricots with chicken.

4)Moroccan-Jewish cuisine:Jewish cuisine has also influenced Moroccan Cuisine. The Mizrahi's style is still well noticed in salad starters Made by marinated olive and vegetable.
Moroccan Cuisine is based on the use of different spices but the most characteristic feature is the use of powder ginger in different tajines. Olive oil is also a characteristic of Moroccan Cuisine as it is the case of all the Mediterranean cuisines.


Moroccan Vegetable and Chickpeas Couscous
The recipe is similar to the Colorful Baked chicken couscous posted earlier,this time I stewed just vegetables and chickpeas.
Traditional preparation of couscous can be time consuming ,a special food steamer called "kiskas" is used,in which the vegetables and meat are cooked in the bottom pot while the couscous steams on top,yielding the most flavorful couscous.Whereas the quick cooking couscous ,lot like pasta ,is cooked separately then mixed with spiced vegetables,herbs and chickpeas.
Recipe
Serves 4
Ingredients :
1 lb Whole grain Couscous
1 big carrot,chopped or diced
1 small Zucchini,chopped
1 small squash,chopped diced
1 cup each of broccoli and cauliflower florets
1 small bell pepper,chopped
1 plum red tomato,finely chopped
1 medium onion,finely chopped
1/4 cup fresh parsley and cilantro,chopped
1 cup cooked chickpeas
Spices
1/2 teaspoon each of fresh minced garlic and ginger
1 teaspoon cumin powder
1/2 teaspoon cayenne or chili powder
1/2 teaspoon fresh ground black pepper

1 tablespoon Extra virgin olive oil
1 teaspoon salt

Method
Heat a large pan on medium heat,saute the onions in oil until translucent.Add all the spices and saute for a minute or two before adding the vegetables.Cover and cook until vegetables are tender.Stir in the cooked chick peas towards the end of cooking process.Cook for another minute or two.
Cook the couscous as per the package directions.Fluff with the fork.
To serve either mix the couscous in the vegetables or layer the vegetables over the bed of couscous.I like to garnish with fresh parsley and tomato rose.

Eating Better for less.....Roasted Pepper Chickpeas Couscous Salad.

Healthy eating should not always be at exorbitant price.Its feasible to prepare decent nutritious meals everyday even on a modest budget.Considering the health costs of unhealthy diet in the long run its wise to invest a little now and avoid all the trouble later.
Here are some ways to eat better for less money :

*Eat Seasonal and Local Foods :The seasonal and local grown produce is always cheaper.Berries ,melons and stone fruits in summer,some fruits like apples,pears,bananas and oranges are available year around.In fall the overwhelming stock of pumpkins and squash can provide the much needed antioxidants for the season,and never throw away the seeds ,its rich in nutrients.

*Pay Less - buy economical foods
Beans and legumes are one of the most cheapest and nutritious source of food.Frozen beans like Edamame(baby soybeans) are a good choice of cheap nutrition.Buy them in bulk for lower price.Low fat milk ,Tofu and Organic eggs are other good sources of protein at no high cost.And among vegetables,the carrots,leafy greens, broccoli, cabbage,
sweet potatoes,potatoes,green peppers,tomatoes
are fresh and affordable through the year.Buying bread from a local bakery can be lesser in price.Besides Rice whole grains like Oats,bulgur(broken wheat),barley and corn meal are most affordable.Nuts like peanuts and walnuts are cheaper than most other nuts.Cashews and Almonds are also cheaper when on sale.The whole grain pasta and couscous is one of the inexpensive staples.


*Shop smart :Plan your meals ahead and always make a list while grocery shopping include healthy snacks like Dried fruit and nuts mix,low sugar multigrain bars and whole grain crackers. Don't shop with empty stomach that often tempts us to buy ready-to eat foods like high sugar\high calorie candy,soda and chips.Coupons can also save a few bucks.

*Plant your garden:Use the space in your back yard.Vegetables like tomatoes,eggplants,beans,Okra,lettuce,spinach,cilantro,mint and peas can be easily grown with little effort.Here is the guide for the beginners.Even if you don't own a backyard,use the space in the patio or balcony,plant herbs ,tomatoes and leafy greens in pots.


Roasted Pepper Chickpeas Couscous Salad.

Rice and Beans doesn't always have to be the most frugal meal,use combination of flavors and foods to make food interesting.I used very common and affordable ingredients for the salad which can be a meal in itself.Barley or Bulgur wheat can also be used instead of couscous.Canned chickpeas are easiest way to add protein to your meal.Use any combination of fresh or dry ,herbs and spices in stock.

Recipe
Makes 4 servings of Salad or 2 servings of main dish.

Ingredients

2 cups Couscous(or Bulgur wheat or barley)
2 Green Bell Peppers
1 cup cooked chickpeas
1/2 cup frozen cooked edamame(Baby soy beans),thawed
1/2 medium onion,finely chopped
1 medium ripe tomato ,chopped
1 cup greens chopped(I used turnip greens)
1 teaspoon spice mix of choice(I used a combination of chili powder ,turmeric and cumin )
Use any chopped herbs for garnish.

Method
Roast the peppers as in this recipe,peel the skin and remove the seeds.Either chop or mix in the salad or use them as serving bowl depending on the size of the peppers.
Prepare the couscous by heat oil in a medium pan,add the onions and saute for 3-4 minutes,add the spices and 2 cups of water.Bring to a boil,mix in the couscous ,turn the heat off ,cover and allow the couscous to cook.
After 10-15 minutes uncover and fluff the couscous using a fork.Mix in the cooked chickpeas,edamame,chopped tomatoes and greens.Add chopped roasted peppers or serve in the peppers.

Chickpeas Corn Vada .Discover the liquid gold,Olive oil



Lets enlighten ourselves with a short lesson in the healthy fat we have been blessed with.

The Fat Choices
What kind of cooking oil do you commonly use? Lemme guess if you are from the Mediterranean or Middle east, most probably you'd be using the healthiest oil of all, the one and only ,the Olive oil.As for the majority of others, the vegetable oils like peanut or sunflower or corn or canola ,occasionally coconut or sesame or soy bean or Palm oil are known as the only good cooking oil or rather easily available and affordable.In my quest for the best kind of cooking oil in terms of health benefits and flavor ,the Olive oil emerges as the ultimate winner.

The Divine oil
The Olive oil has been around for thousands of years.Olive oil was sacred to Prophets Moses, Jesus, and Muhammad(peace be upon them).Its sacredness and good health benefits is mentioned several times in the Holy books.

Get the facts

A look at the nutrition facts of olive oil verses the common cooking oil,its clear what separates the Olive oil from the rest is the high content Mono saturated and Poly saturated fats,an absolute essential for heart and skin health,reducing risk of cancers ,controlling inflammatory conditions like arthritis and asthma .Other good sources of these good fats are rapeseed oil , hazelnuts and almonds.

How did I discover the liquid gold?
Born and brought in a place where Olive oil was a luxury ,used only for massaging or beautifying ,a far cry from regular cooking oil,I was blissfully naive about the wonder oil . The timely move to US and my son's diagnosis with asthma and the hunt for nature's best foods finally lead me to the marvel. And thankfully for those us living in US, even though pricier than vegetable oil ,the Olive oil is available in abundance.

Which Kind Of Olive oil to chose?
Olive oil is sold in different varieties,Extra Virgin,Virgin or light, depending how is processed.The best kind is the extra virgin olive oil aka EVOO,which is processed without any chemicals and also in higher in Vitamin E(the anti-oxidant vitamin).And beware of the cheaper brands,they could be adulterated with vegetable oil.

Make the Change
Do not alienate this nature's best food if its readily available in your stores.For starters ,who are used to cooking with mildly flavored oils,mix it with your usual vegetable oil and slowly make the transition for insuring your family's good health,more importantly for those with(or under the risk) heart disease or common inflammatory conditions like arthritis,diabetes,cancer,allergies,asthma to name a few.I personally buy both vegetable and olive oil ,use half and half in most of the recipes except for deep frying.

How much is sufficient?
If its super healthy,doesn't imply one can drink it cup-a-day to get the extra benefits.Nope even olive oil in excess in not good,consumption of about 2 tablespoon of extra virgin oil a day is sufficient for adults.

Cooking with Olive oil.
Olive oil has lower smoking point and also loses its nutrients when heated to high temperature.Hence its ideal in salads,stir fries and shallow frying.

Olive oil,the Skin nourisher
The ancient oil with richness of vitamin E is not uncommon in beauty products.
A head to toe body massage with olive oil before bath is best way to pamper your skin and hair, linked with reducing hair loss and wrinkles.

Recipe Chickpeas Corn Vada
OK,I'm starving ! lets get to the spicy snack of the day with wholesome chickpeas and corn.

Ingredients
1 cup corn kernels,fresh or frozen,if using frozen ,thaw
and squeeze out excess water.
1 cup cooked or canned chickpeas,drain all water
1/2 teaspoon chilli powder
1/4 teaspoon turmeric
3/4 teaspoon salt
1 teaspoon fresh ginger,grated
2 tablespoon coriander leaves, chopped
2 tablespoons chick pea flour(besan)
3 tablespoon Extra Virgin Olive oil,little more if shallow frying

Method
Process the corn in a food processor or blender until coarsely chopped.Now add in rest of the ingredient except oil and flour and process some more until ingredients are well combined. Transfer to a mixing bowl and mix in the chick pea flour.
To Bake
Preheat Oven to 350F.
Line the baking sheet with an aluminum foil,drizzle 2 tablespoon of oil all over.The mixture is going to be sticky to work with,so lightly grease your hands with oil and take spoonful of the mixture and gently press on your palm to form a patty.Lay them in the lined baking sheet,placing them in rows about an inch apart.Bake for 15-18 minutes until golden brown,for a crisp topping,now turn the oven mode to broil and let cook for another minute or two for crispier vadas.
To Shallow fry
Heat about 1 tablespoon of oil in large non stick pan on medium heat.Shape the patties just like above and gently lay in the heated oil,let cook for 4-5 minutes before flipping and cooking for another 3-4 minutes until golden brown .Fry in 2-3 batches.Serve warm with your favorite beverage.

Beet Hummus


Chick peas fuse together marvelously with vegetables like beets,roasted peppers or artichokes and greens like spinach,mint,cilantro to give a vibrant variation to traditional hummus.I could eat hummus everyday without any worry for its bursting nutritive value,Chick peas are low in Saturated Fat, and very low in Cholesterol and Sodium(in home made chick peas). It is also a good source of Dietary Fiber, Protein and Copper, and a very good source of Folate and Manganese.

I'm sending the healthy pink hummus recipe to Ley's "Baking for breast cancer awareness" , a breast cancer awareness event. Healthy diet and early detection are key in prevention of any cancer.Beets are loaded with vitamins A, B1, B2, B6 and C. The beet greens have a higher content of iron compared to spinach. They are also an excellent source of calcium, magnesium, copper, phosphorus, sodium and iron.It is considered a blood cleanser ,that helps the body to get rid of many unwanted ailments. Think no more, buy some beets,soak your chick peas tonight and make a fresh bowl of this tasty creamy healthy delight .
Recipe Beet Hummus
Ingredients
2 cups cooked or canned Chickpeas\Garbanzo beans\Bengal gram(home made are better ,canned are higher in sodium)
1 small beet,peeled and cooked until tender with a cup of water.
2 cloves garlic,roasted in olive oil
2 tablespoon Tahini sauce(recipe follows)
1/2 a fresh lime juice
1 green chilly(optional)
1/4 cup Extra Virgin Olive Oil

Method
Finely blend the beets in processor or blender,add just few drop of water if needed. Then mix in the cooked chick peas and roasted garlic. Blend again until the mixture is of smooth paste consistency,for a thick creamy hummus add just few drops of water if needed. Stir in the oil ,salt(for home made chick peas,no more salt needed for canned chick peas) and lime juice.Blend again till creamy. Transfer in a serving plate or bowl,garnish with edible rose(unbelievably easy to make,watch Vah chef in this video )and mint leaves. Hummus is appetizing with any whole grain chips,I served them with Home made pita chips. Stores in refrigerator for a week,enjoy it on toast or sandwiches or Kababs.

On request from my dear buddy Zee,here is the tahini recipe.
Tahini Sauce
3/4th cup white sesame seeds
2 gloves garlic, crushed
1/2 teaspoon kosher salt
1/4 cup olive oil
2 tablespoon fresh lime juice
1/4 cup water

Method
Toast the seeds on medium heat on stove top or in oven at 350F,while stirring occasionally ,about 10 minutes.
Grind the seeds in a processor or a coffee grinder until finely powdered.Stir in rest og the ingredients and blend until smooth and creamy.Stores in refrigerator ,drizzle on sandwiches or Kababs or add in hummus for a creamy texture and lot more flavor.

Pita Chips with Hummus


Pita chips with Hummus
Hummus is creamy yummy and full of nutrition. Originating from Middle East, its become quite popular in western world. Can be served with pita chips ,falafel, pita bread, kababs ,gyros and many more versatile recipes.

Hummus is high in iron and vitamin C. The chickpeas make it a good source of protein and dietary fibre. Depending on the recipe hummus carries varying amounts of monounsaturated fat. Hummus is useful in vegetarian and vegan diets and like other combinations of grains and pulses, when eaten with bread it provides essential amino acids.

Pita chips with hummus can be a good appetizer , you gotta try this in your next party. Your guest will surely love it not only for its taste but also for its nutritive value.


To make Creamy Yummy Hummus

2 cups cooked or canned chickpeas.
2 cloves garlic
3 tablespoon Tahini sauce
1/2 a lime
1 green chilly(totally optional)
few fresh mint leaves
1/4 cup Extra Virgin Olive Oil

To make the hummus.
Very simple. Smoothly blend all the ingredients in you food processor until creamy .Start without adding water then slowly pour in the Oil and lime juice

Reserve some EVOO for later. Transfer in a dipping bowl or spread on an elegant plate and drizzle some EVOO along with sprinkle of cumin powder or paprika and few green olives. MMMMM ...tasty .Serve with chips, crackers or kababs. Stores for about a week in tight container.



To make the Pita chips
Ingredients you'll need are

2 Large whole wheat Pita pockets
3 tablespoon Extra virgin olive oil to brush on bread
1/4 teaspoon each of cumin and coriander powder
1/4 teaspoon chilly powder
1/8 teaspoon turmeric
1/4 teaspoon Salt

To Make the Crispy Pita Chips
Preheat oven to 400 degrees F

Combine Olive oil and spices in a bowl. Brush the mixture over each of the triangles
